Earlier this year we wrote about FARM8’s wonderful Jogurt. This week we will write about two other products with connections to the firm. A few months ago we had an opportunity to sample both.
One is a nihon-shu made by Tsunan Sake Brewery. It is marketed in a very attractive and useful bottle that is ideal for traveling. This 15.5% ABV beverage with a rice-polishing rate of 50% has a pleasant mouthfeel, but lacks the complexity necessary to be memorable.
The gelati—plain and strawberry—both contain sake lees, which make their presence known on the palate. The level of sweetness was restrained, allowing the complexity provided by the lees to come shining through. There was a hint of sherbet in both of them, which added another dimension to the experience.
